“Mommy, I’m hungry!”
Almost every single day that my daughter comes home from school, she’s hungry. She’s a growing 12 year old, and just like infants; big kids have growth spurts too. So their appetite can go from nibbling crackers to wanting to eat everything in sight.
Normally, I tell her to eat an apple or banana. But sometimes, that’s not enough to hold her over until dinner is ready. These 5 after school snacks are inspired by some of my daughter’s favorite foods.
Hummus with salt & pepper tortilla chips
Most times I make my own hummus. But for those busy days, I keep ready made hummus in the pantry. I grab tortillas, spray them with avocado oil & sprinkle a bit of salt and pepper on them. I then cut them in fours & toast them in the oven for no more than 10 minutes. This is not only a tasty snack, but a healthy one.
Cinnamon Baked Apples
Slice apple into pieces and out them onto a piece of aluminum foil. Drizzle some melted butter onto the slices. Then sprinkle cinnamon, sugar and a little nutmeg. Close the aluminum foil and bake for 20 minutes.
It’s as simple as that. Buying fresh fruit, cutting them up and tossing them in a bowl. My favorite mixture….Mango, watermelon, pineapple and strawberries. With a sprinkle of tajin seasoning.
If you know what flan is, you’re asking yourself “how is this healthy?” Well, I make dairy free flan. With coconut milk and organic or coconut sugar. Yup! That’s right. Dairy free flan. And it’s delicious.
Carrots and ranch dip
Ok, so not all kids like veggies. But this is a tasty snack that is eaten a lot in my house. We go through carrots and ranch dressing like it’s going out of style. There’s nothing to prepare except putting a little ranch dressing in a bowl.
