It’s almost time for the kids to go back to school and people are crowding the stores for clothing, shoes, backpacks, and supplies. What about lunch? Plan on sending those regular old peanut butter and jelly sandwiches again? Mix it up a little. Here are 3 lunch ideas that are not only easy; but they’re affordable, cute, and pretty healthy too.
Peanut Butter and Fruit
Spice up your child’s peanut butter sandwiches by using whole wheat bread, peanut butter (or another nut butter) and adding thinly sliced bananas and/or strawberries. After you’ve assembled your sandwich, use a cookie cutter to make an adorable cutout. Pair with a low fat string cheese or yogurt.
Make Your Own Pizza
Kids love playing with their food. Let them get creative with make your own pizza kits. Use wheat bagel thins as the pizza base. Slip it into a sandwich bag. Then use 3 condiment cups with lids for sauce, low fat shredded mozzarella, and mini pepperoni. Your kids will be excited to show this lunch off at school. Throw in a snack of some fresh fruit on the side. Pineapple goes great with this lunch.
When the kids go back to school, it’s still warm out. Salads make a great lunch. Grab your favorite mixed greens and top it with any combination of things such as: Walnuts or pecans, Strawberries, Blackberries, Feta or goat cheese, Chicken, and Italian dressing (in a condiment cup – you don’t want soggy salad!). Of course you’re welcome to mix it up as you please.
All of these lunch ideas will make between 5 to 8 meals each once you buy all of the ingredients, and will cost between $1 and $2 per lunch. Giving your kids a lunch they will love and that is healthy doesn’t have to hurt your pockets or your watch. Enjoy!
